The measurements shown are editorial orientation values: every manufacture and collection defines its own proportions. Verified dimensions of a specific reference are always stated on its product page.

A) Table and dining knives

The pieces laid at each guest's place setting: they accompany the main course, dessert, fish or meat.

B) Serving knives

Shared pieces of the table: used to carve, portion and serve from the platter or the board.

C) Kitchen and preparation knives

Chef's knife

A wide, curved blade of roughly 18–24 cm designed for rocking cuts on the board. It is the most versatile piece in the kitchen.

Oriental chef's knife (santoku)

A straighter, slightly shorter blade than the chef's knife, often with a granton edge that reduces food sticking.

Bread knife

A long serrated blade that cuts through crust without crushing the crumb. It also suits cakes and tomatoes.

Paring knife

A short 8–10 cm piece handled in the hand rather than on the board, with maximum tip control.

Vegetable knife

A short straight blade between paring and chef's knife, working on the board.

How to choose

  • Start with the table knife: it sets the scale for the rest of the service.
  • Add the dessert knife if you often serve cheese or fruit.
  • Fish and steak knives are menu-specific pieces: add them only if that course appears on your table.
  • Before comparing prices, look at construction, blade material, handle material and finish separately.

Knife construction guide

We describe the usual constructions without ranking them by quality: each answers a different criterion of weight, balance and maintenance.

  • Construction: how blade and handle are joined.
  • Blade material: the alloy that holds the edge.
  • Handle material: steel, silver, silver plate, resin or wood.
  • Finish: surface layer (polished, matt, PVD).

Monobloc (single piece)

Blade and handle come from one single piece of metal, without an intermediate joint. The silhouette is continuous and there is no seam between handle and blade.

IN THE HAND
Weight depends on material thickness and is usually perceived as distributed along the whole piece.
WHAT TO CHECK
With no glued or welded joint there is no seam to inspect. Check thickness and in-hand balance, which vary considerably between collections.

Hollow handle (Hohlheft)

The handle is formed from two shaped halves joined together, leaving a hollow interior; the blade is manufactured separately and inserted and fixed into that handle.

IN THE HAND
Allows a voluminous handle without proportional weight; the centre of gravity usually sits closer to the hand.
WHAT TO CHECK
There is a joint between blade and handle. Follow the manufacturer's washing instructions and avoid prolonged soaking.

Solid handle (Vollheft)

The handle is solid, without an internal cavity. It may be one piece with the blade or carry a separately made blade joined to the handle.

IN THE HAND
For the same dimensions it weighs more than a hollow handle; many diners perceive it as more settled.
WHAT TO CHECK
Compare the actual weight, not just the look: two solid handles can differ considerably depending on metal gauge.

Solid steel handle (Stahlheft)

A manufacturing term — German in origin — normally used for knives whose handle is a solid steel part and whose blade is made separately and attached to that handle. It is not a synonym for “handle material”: it describes a construction. Usage of the term varies between manufactures, so always read the manufacturer's own description.

IN THE HAND
Being solid, the handle usually adds weight and a settled feel; the exact distribution depends on steel gauge and collection design.
WHAT TO CHECK
Do not infer the construction of a specific reference from its look or commercial name: only the manufacturer's declaration counts. Read construction, blade material, handle material and finish separately.

Forged or inserted blade

In some collections the blade comes from the same piece as the handle; in others it is made separately and joined. Both solutions coexist in the table-cutlery market.

IN THE HAND
Perceived rigidity and weight distribution change with the process and the gauge of steel used.
WHAT TO CHECK
Check what the manufacturer declares on each reference; do not infer it from the outward appearance.

Smooth or serrated edge

Table and steak knives exist with both smooth and micro-serrated edges. The fish knife has no cutting edge: it separates fillet from bone.

IN THE HAND
Serration helps with fibrous meats and bread; a smooth edge gives a cleaner cut on tender pieces.
WHAT TO CHECK
Choose according to your usual menu. Neither option is generally superior.

Stainless steel

This is the predominant material across the cutlery references we currently list. Specific designations (18/10, 18/0, blade steels) are stated only where the manufacturer declares them for that reference: we do not infer them from the word “stainless”.

Terminology

What 18/10 and 18/0 mean

The figures indicate the chromium and nickel content of the alloy. Some knife blades use steels with less nickel or more carbon to hold an edge better. This is technical information: check it on each product page.

Resin and other handle materials

Several collections currently listed combine stainless steel with a resin handle in different colours. Other houses use acrylic or wood. Care depends on the handle material and on the manufacturer's instructions.

Silver plate (silver-plated steel)

A base-metal core covered with silver. Some references in our assortment declare silver-plated stainless steel. Figures such as 20, 40, 90, 100 or 150 on silver-plated cutlery indicate the amount of silver applied, not its purity.

Terminology

Sterling silver 925 (terminology)

Solid silver of 925/1000 purity, hallmarked by the maker. We explain it because it appears frequently in historic and auction cutlery; it is not currently a declared material on the active references in this category. If you are looking for solid silver, ask us and we will verify it with the manufacture.

The finish is a surface layer, not the base material: mirror polish, matt satin or PVD coatings in gold, copper or black tones. Each finish has its own care instructions, defined by the manufacturer.

There is no single rule. Dishwasher suitability depends on the exact material, the construction, the finish and, above all, on the manufacturer's instructions for that reference. Always follow them; if in doubt, ask us before the first cleaning.

Frequently asked questions

What is the difference between a table knife and a dessert knife?

Length: the table knife measures about 22–24 cm and the dessert knife about 20–22 cm. Within a collection the design is usually identical; only the scale and sometimes the blade width change.

Why doesn't a fish knife cut?

Because it is not meant to. Its wide, blunt blade separates the fillet from the bone without shredding the flesh; a cutting edge would spoil the texture of the fish.

Do I need steak knives if I already have table knives?

For firm-textured meat, yes: the pronounced edge — plain or serrated — avoids tearing the fibre. For the rest of the menu the table knife is sufficient.
